I seriously love baking. While my cooking can still be a hit or miss (I'm getting better at it), my baking has always been on point. I just discovered a pretty amazing recipe for chocolate chip scones, and yessir....you need to make these right now!
I should mention these are totally toddler-approved! (And vegan! Just replace the butter with coconut oil!)
And for a more close-up look:

Enjoy!

This past couple of weeks (I know I've been slacking on updating my Bento ideas), I did something a little different for Bae's lunches. I made him a sandwich (which won't be pictured) but his bento had plenty of snacks. Let's check out what I came up with!
Above: a sliced granola bar, strawberry slices, and yellow bell pepper strips. Right: blackberries, sharp cheddar cheese bites, and hard-boiled egg.
The goal
I posted about this recipe before but I decided to amend it a little - I used coconut oil instead of butter!
While the dough was a bit crumbly to put into the cookie scoop, the recipe still came out amazing! I also used cinnamon and nutmeg to give it an extra flavor. I would also add nuts (walnuts work great) but I ran out this time.
The recipe makes about
About once or twice a week, I like to incorporate a completely vegetarian dish in my meal planning. One, it's good to not eat so much red meat. Two, some veggie dishes are well, delish!
I came across this recipe for mushroom tacos and modified it a bit. One, I used portobello mushrooms. I also diced up a yellow bell pepper to add with it. I used coconut oil instead
Here the meals I prepped for Bae for his Bento boxes this past week. There are only four pictures because he accidentally left his Bento at work.
I made honey-soy baked salmon with roasted potatoes and squash.
The salad was leftover chicken Caesar from Panera (and it's hella good!). I also made a ham and cheese sandwich. The dark chocolate and nuts are from Trader Joe's.
The hummus and pretzels actually came
I debuted Rollin' in my Bento last week (click here for a refresher) so here's the progress of the week so far.
Wednesday:
Cheese bites, strawberry slices, and chicken slices. For the recipe of the salad, click here.
Thursday:
I love pizza so I was super jazzed to make this recipe, Portobello-style.
Friday:
I created leftovers from the soybeans and pasta from earlier that week. I also added a fiber bar to give Maks a
Last week, I debuted Bear's bento (click here for a refresher). This week, I'm debuting Maks's.

I purchased the Skater Japanese Modern/Traditional Compartmental Bento Box (ooh, try saying that three times fast!) from Amazon. While I was a bit skeptical about it because I loved Bear's so much, it turned out to be a hit with the hubby!
And as a result, I ended up becoming more creative with
So a few weeks ago I made sweet n' sour chicken. Here are my results:
I used chicken tenders and dipped them in cornstarch and egg. I fried them in coconut oil.
I'm not endorsing any particular coconut oil (I think they're all more or less the same).
Then I combined soy sauce, apple cider vinegar and ketchup for the sauce. For those wondering, this is the part where the Russian of
Okay, I'm going to keep it 100 here: I was never a fan of cauliflower growing up. In fact, it ranked up there with lima beans and peas in terms of food I would never ever eat again in my adult life. (I tend to be a bit more lenient on peas but if I can avoid them, I do.)
Lately, I've seen a ton of cauliflower posts pretty much
So, I have a confession -
I used to buy the store bought waffles - Eggos. Now, there's nothing wrong with them or the brand. In fact, my favorite was strawberry. I've been buying them for years.
I also had a waffle maker for the past several years. Yeah...you read that right. I still bought waffles even though I have a waffle maker.
Several weeks ago I decided once and for all,
