It’s taken a while but I think I finally learned how to perfect this.

I need the right amount of salt and sugar (and yes, both are required if you like seasoning) while adding the right amount of hot water and cornmeal.
Recipe:
- 1 cup cornmeal
- 1 Tbsp shortening
- 3/4 cups of boiling hot water
- Pinch of sugar
- Pinch of salt
- Oil for frying, about 1/2 inch.
Directions:
- In a medium bowl, combine cornmeal, salt, and sugar. Add boiling water and shortening; stir until shortening melts.
- Pour oil to a depth of 1/2 inch in a large skillet and heat it on medium.
- Shape cornmeal mixture into flattened balls using a heaping tablespoon as a measuring guide.
- Fry each in hot oil, turning once, until crisp and golden brown, about 5 minutes.
- Drain on paper towels. Serve at once.
