Okay, so I’ve made portobello mushroom tacos before but they were pretty plain – just the tortilla, maybe some sauce, and the mushrooms. Like I’ve said – Plain Jane.
You can always take a favorite and make it better…or better yet, go to someone else’s blog and use what they did!
I did modify the recipe just a little. I didn’t get a chance to use the roasted bell pepper sauce (it’s on my to-do list soon). I also roasted the bell peppers, chopped them up, combined them with the mushrooms, cilantro, and everything else before putting them in the oven to cook together at 350 for 10 minutes.
LOOK HOW BEAUTIFUL THAT IS! (I so didn’t mean to be yelling at you but man, when your food is so colorful, it’s a beautiful sight!)

Sorry I posted a half-eaten taco but trust me when I say it was hella good!
