My Shrimp and Grits Recipe

I recently made an excellent shrimp and grits recipe. Why? Well, I’ll tell you why – I was watching the latest season of 90 Day Fiancé and see how one of the chumps was from New Orleans. Of course, all I wanted was soul food as I watched the hot mess episode.

So, I decided to save money and try my own version of shrimp and grits. And guess what, fam? It came out so darn good!

I wanted to share what I did with you! So let’s go!

Ingredients:

  • 4 cups water
  • Salt and pepper
  • 1 cup grits (I used quick grits but you can use any kind)
  • 3 tablespoons butter
  • 2 cups shredded sharp cheddar cheese
  • 1 pound shrimp, peeled and deveined
  • 6 slices thick-sliced bacon, cooked and chopped
  • 4 teaspoons lemon juice
  • 2 tablespoons chopped parsley
  • 1 cup thinly sliced scallions
  • 1 large clove garlic, minced

Directions:

  1. Cook bacon until crisp. I cooked mine in an oven at 350 degrees for 20 minutes. Other people prefer to fry theirs. Save the bacon grease.
  2. Bring water to a boil. Add salt and pepper. Add grits and cook until water is absorbed. Remove from heat and stir in butter and cheese.
  3. Rinse shrimp and pat dry. Take the extra bacon grease and add the shrimp. Cook until shrimp turn pink.
  4. Add lemon juice, chopped bacon, parsley, scallions and garlic. Saute for 3 minutes.
  5. Spoon grits into a serving bowl. Add shrimp mixture and mix well. Serve immediately.
