Someone posted a thread asking about the best salad recipes and well, I love myself a good salad. I found this one that I normally would’ve ignored but it looked promising with some ingredients I’ve never tried before.

Introducing Spicy Kale Salad. What’s different about this recipe is that there are no measurements. Seriously, I watched a video where a chef added in all of the ingredients and that was that! So, I figured, well, let me try that. Let me see how that works…
Ingredients:
Chopped kale (enough for at least 3-4 people).
Olive oil
Chopped red onion (I used half and it was plenty!)
Nutritional Yeast
Smushed avocado
Chopped sun-dried tomatoes
Juice of 1/2 fresh-squeezed lemon.
Cayenne pepper (this is optional but this adds the spice!)
Salt
Pepper
Optional:
Sliced chicken
Silvered almonds
Preparation:
Remove the stems from the chopped kale. Thoroughly rinse with water and pat dry with a paper towel. Sprinkle olive oil over the kale and massage it in so the olive oil completely covers the kale.
Finely chop up the red onion and add into the kale, along with the nutritional yeast, cayenne pepper, and chopped sun-dried tomatoes.
Smush up the ripe avocado and put it in the salad, along with the lemon juice. (While you can buy lemon juice by the bottle, there’s really nothing like fresh-squeezed juice!)
Please season your food!
